I made some chicken salad this past weekend almost identical to your recipe. So good!

I know of at least one commercial recipe that uses chopped water chestnuts for crunch along with the celery in their chicken salad. They have just the right ratio that makes for a very delicious chicken salad for store bought.

Would you use some diced red or other onion instead of the onion powder? Or would that be too strong of a flavor?

Would canned chicken be okay to use?

Honestly I prefer the Dona Maria moly to the home recipes that many people had in Mexico. Of course there was always that special cook that had their own recipe that was amazing.

This is crazy! I just made this on Saturday. I used dried cranberries but almost used cherries until I realized I had cranberries in my trail mix. Also, I made it the night before and then added more mayo the next day because it seemed to soak it up. It's so much better the next day (IMO). I had leftovers so I froze some, but doubtful it will hold it's appeal! Thx AGAIN!

It's almost Biblical how far a chicken breast can stretch, when cut up and stir fried in recipes like this. One or two will feed many chopped into bite sized pieces in chicken fried rice and chicken chow mein too.

Chopped apples are also good in the meat salads. (Chicken salad, ham salad, tuna salad, etc.) They add a touch of sweetness & a nice crunch. In our meat salads, we always had celery, apples & pecans.

I'm not a fan of grapes ... I like to use a chopped apple. That and some walnuts are my go to additions. I like the chicken shredded a bit more as well. I will sometimes use part mayo and part Greek yogurt. Edited to add, I'm with another poster who says ciabatta rolls are very good for this.
